Casks
Wood leak-proof container for aging or storing wines. Casks can be of different sizes and shapes: pipas, botas, pipos, fudres etc.
Complex
Multiple aromas, with bouquet.
Consistency
A positive descriptor for a wine’s impression on the palate (smooth, rough, soft, oily, pasty, sweet, light, velvety, viscous etc.). The level of solidification of a wine.
Colour
A wine’s chromatic appearance. According to there colour, wines can be white, pink (rosé) or red wines. The intensity of the colour is drawn from the grapes, the climate and method of vinification.
CAO
Controlled Appellation of Origin. In Portuguese: DOC – Denominação de Origem Controlada. A term given to wines traditionally linked to a geographically defined region and subject to a set of rules established by law (characteristics of the soil, recommended and permitted grape varieties, vinification methods, alcohol content, aging periods etc.) In practice, this status was obtained by those regions that historically produced specific types of wines.
